INTERNATIONAL CUISINE

This course explores the use of indigenous ingredients in the preparation of traditional and contemporary international specialties. Items prepared in the kitchen build upon established culinary principles and are applied to International cuisine. Timing and organizational skills are emphasized.

ASIAN CUISINE

This course deals with the basic knowledge and skills in the presentation of Asian Cuisine. This will give students an idea, of how these cuisines were developed and the techniques on how to prepare different dishes with the one of specialized tools.

BAKING

This course is a study of the fundamentals of baking including, dough, quick breads, pies, cakes, cookies, tarts, and basic items made in a bakery.

ITALIAN CUISINE

This course will introduce the student to the foundational food traditions that unite the Italian peninsula as well as the traditions that distinguish regional differences.

JAPANESE CUISINE

The module aims to introduce students to the principles and practices of Culinary Arts and introduce Japanese Cuisine with respect to the general setting and operation of a professional Japanese kitchen.
